Satay with Quorn Fillets

Inspired by everyone's favourite local street food, Rachel (IG@munchwithvienna) has created a satay recipe with Quorn Fillets, adding a tasty vegetarian option to any dinner table. Enjoy them as a starter, or on their own! Easy to cook, and easy to please.

Ingredients

  • 1 Quorn Fillets (312g)
  • 3 tbsp olive oil
  • 2 stalks lemongrass, white parts only
  • 1 cloves garlic, peeled
  • 3 small shallots, peeled
  • 2 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp sea salt
  • 2 tbsp raw honey

Method

  1. Cut the Quorn Fillets into small cubes and set aside.
  2. Blend all remaining ingredients in a food processor. Add a little water if needed.
  3. Coat the fillets with the seasoning, stir to mix well. Marinate the fillets for at least 3 hours in the fridge, or best overnight.
  4. Thread 3-4 marinated fillet cubes onto bamboo skewers. Spray with a little oil before grilling.
  5. Grill the skewers for 4 minutes on each side (on Ninja Foodi) or in an oven at 220° for 15 minutes until cooked through and the surface is nicely charred on both sides.
  6. Serve hot with your favourite dip and enjoy!

Chefs tip

Soak the bamboo skewers for 2 hours-overnight before cooking to prevent burning
